During the Adoration in Resh, I've always used the Sign of Osiris Risen - arms crossed over the chest, right over left, fingers touching the shoulders.
In the opening "Hail unto thee ...X ...", use whatever sign you were taught as a Probationer. The Sign of the Enterer is certainly usable here. If you like, there's a well established tradition of using the published grade signs - Zelator for Air/East, Philosophus for Fire/South, Practicus for Water/West, Neophyte for Earth/North.

There's no actual rule. But prudence often suggests that one not mention a grade unless there's an actual reason for it. For one thing, one circumvents some ego-inflation issues that way. There's also a certain sensibility that one tends to develop as one moves through the grades, and that sensibility causes one usually to refrain from mentioning a grade unless there's a compelling reason.

All you need to know about someone's A.'.A.'. grade is if they are a Neophyte and then if they are a Zelator etc. ad nauseam until you get to a certain point and from there you're usually on your own.
